Spicy Urad Dal Poori

Spicy urad dal poori is the tastiest poori with full meal ingredients. The traditional Puri is a standard breakfast dish in almost every Indian home. It is eaten with Aloo Ki Sabzi or pickle or tea. While all other recipes use flour, it also has Urad Dal in it, making it unique and different from other poori. It is basically a speciality of North India.

The street of Agra and Mathura are the best breakfast. Every local or tourist enjoys this breakfast at home or even in the streets every morning. These pooris are served with aloo gravy and pickle.  

Ingredients: 

For the Dough:

  • Maida 1 cup
  • Fuji 1/4 cup
  • Kalonji 1/2 tsp
  • Oil 1 tbsp
  • Salt as per taste

 For Masala Powder:

  • Jeera 1 tbsp
  • Dhania seeds 1 tbsp
  • Black pepper 7
  • Dry Kashmiri Lal Mirch 4

For Stuffing:

  • Urad dal 3/4 cup
  • Oil 2 tbsp
  • Chopped dhania 1 tbsp

Other Ingredients:

  • Oil for deep fry

Method:

For Dough:

  • Combine all the ingredients in a big bowl and mix well.
  • Now knead into a stiff dough using water.
  • Cover and keep aside for 20 minutes.

For Masala Powder:

  • Combine all the spices and give a dry roast on slow flame till it releases an aroma.
  • Now cool down the roasted spices and then give blend in a mixer to a fine powder.
  • It’s ready, keep aside.

For Stuffing:

  • Wash and soap the urad dal for 5 hours in enough water.
  • After 5 hours drain the water and blend in a mixer using very little water.
  • Make sure the dal is in a coarse paste. (Don’t make it smooth paste).
  • Heat the oil in a nonstick or steel pan.
  • Now add urad dal paste and salt, and make sure to stir continuously for 2 3 minutes on medium flame.
  • Add masala powder and cook more for 3 minutes on medium flame.
  • Now add chopped dhania and mix well. 
  • Switch off the flame and keep it aside to cool.
  • Final Process of Poori:
  • Divided the dough and stuffing into equal portions.
  • Roll out one poori in a thin round shape with the help of little oil.
  • Fill the stuffing in the centre, close the edges to cover the stuffing and roll out again into small poori.
  • Repeat this step with the remaining dough and stuffing.
  • Heat the oil to deep fry the poori. 
  • Fry the pooris one by one till they turn golden brown from both sides.
  • Enjoy Urad Dal Poori with tea or a pickle.
