SAMBHAR
Ingredients:
- Salt- as per taste
- Oil- 2 tbsp
- Some Curry leaves
- Mustard seeds- 1tbsp
- Cumin seed-1 tbsp
- Haldi powder-1/2 tsp
- Coriander powder- 1 tsp
- Toor dal – 1/2 cup
- Onion – 1
- Veggies – beans, drumstick, ladyfinger, potatoes, carrot, pumpkin ( total1 cup of these veggies)
- Sambhar masala- 3 tbsp
- Amchoor – 2 tbsp (I used Homemade, that’s why sambhar is dark in colour)
Method:

- Boil Toor dal in a pressure cooker and place aside
- Cut all the veggies into small pieces and then shallow fry after that place them aside.
- Now take a pot, and add oil on low to medium flame.
- Once the oil is hot add cumin seeds, curry leave and mustard seeds. Then add long sliced onions. When onions turn soft and change their colour, then add salt, coriander powder, haldi powder, amchoor and some water. Then add Toor dal and mix well.
- Now add sambhar masala and mix well with a spatula, then add all fried veggies.
- Sambhar is ready to serve after 5 to 10 minutes on low flame. Serve hot with idles.
