Malai Makhana

Malai Makhana is a simple and delicious curry made with roasted makhana in a Kaju-Tomato gravy. It is a good change from regular lentils and vegetables in everyday cooking and it is also fancy enough for special occasion cooking. This easy snacks recipe is best to have with Roti.

Ingredients:

  • Makhana- 1/2 cup
  • Oil – 2 tbsp 
  • Tomato- 2 big
  • Onion- 1 big
  • Kaju – 8-9 pieces
  • Garlic- 1 inch
  • Haldi- 1 tsp
  • Salt- as per taste
  • Garam masala- 1 tbsp (Prefer homemade)
  • Kashmiri red chilli powder- 1 tsp
  • Green chillies- 2
  • Fresh cream/malai- 2 tbsp
  • Kasoori methi- 1tbsp

Method:

  • Take a pan on medium flame, then add oil. When it gets hot then put chopped onions and garlic and after they change colour then add garam masala, salt and haldi. 
  • Then add tomatoes and cook for 2 to 3 minutes and now add Kaju and 2 glasses of water. Cook until the masala gets soft.
  • Remove the pan from the flame and let the masala cool. 
  • In a grinder, put the masala into the jar and grind it to make a smooth paste.
  • Again put the pan on medium flame. 
  • Add 1 tsp oil, now add Kashmiri red chilli powder and masala paste. 
  • Now add water as much consistency of the gravy as you want, then cook for 5 minutes on low flame and add malai/fresh cream and kasoori methi.
  • Mix the gravy and add both makhanas. 
  • Again cook for 2 minutes with the lid off and then switch off the flame and give rest 10 minutes, so that the makhanas get soft.
  • Serve hot with roti.
