Rice and Buttermilk Soup is an easy soup recipe. This South Indian tasty recipe is easily digestible and can be served on any occasion. Try this simple soup recipe. In Himachal, this soup is called “Redoo”. It’s a little bit different but tastes the same. I will share Redoo recipe soon.
Ingredients
- 1/3 cup rice
- 4 cup water
- 2 and 2/3 cup buttermilk
- Corn flour
- 1 teaspoon cumin seeds
- Mint leaves
- Curry leaves
- Salt
- Fresh coriander leaves
Method:
- In a pan, roast the mint leaves, cumin seeds and curry leaves for a few seconds. Keep aside.
- Now, take the same pan and add rice and water. Cook till the rice is done.
- Then add buttermilk and cornflour and cook for a few minutes.
- Now add the roasted cumin seeds, mint, curry leaves, chopped green chilli and salt. Let cook for 2 minutes on simmer flame.
- Garnish with fresh coriander leaves. Serve hot as well as cold as per your choice.
